Simplicity

Sometimes three or four ingredients are all a person can handle. Or, at least, all this person can handle. We had one of the nasty winter colds descend upon our household this week, so I was not up for anything complicated. When we began discussing which recipe we would try next, I admitted to Mandi, "I need something simple. Can you find my three-ingredient cookbook?" And while the elusive cookbook I had in mind still has yet to be located, we did find an equally simple recipe: White Bean Dip. Comprised of nothing more than canned beans, water, olive oil, vinegar, salt, and pepper, I didn't expect a life-changing dish. And, it wasn't. But, it wasn't bad either. It was a simple base of a dip that could easily be spiced up with my ever-faithful spice of choice (cumin) or a touch of chopped jalapeno or some fresh herbs. The original recipe called for fresh rosemary, which is probably exactly what the recipe needed. We, foolishly perhaps, left it out to make things even simpler. I suppose there's only so simple one should really go.

In any case, we made it through a rough week, with a little White Bean Dip to boot. For that, I am grateful. I think that sometimes simple is just what the doctor ordered.

  1. I love your drawing of the recipe. Really, I'm glad you decided to go easy on yourself this week. I'm sure the dip has lots of possibilities. Dan is so good to try all your experiments:-) Little Owen has no idea what he's in for during his growing years. The kid will like everything!! And, that's a good thing!

  2. Your bean dip was quite a tasty little thing. But my one complaint -
    You call that math?! That's downright easy! There are no Wave Functions, Derivatives, or even a darn division in the whole thing!

    On second thought, I'm glad you did that math on this one. Have you ever had an white bean Integral from 0 to infinity? Yeah, not a pleasent sight.

  4. Yes, Mandi. You left out the salt and pepper. I'm telling you...it helped a lot.
