The Recipe: Tropical Granola

Tropical Granola
from Granola Madness by Katherine Dieter and Donna Wallstin

6 cups rolled oats
3/4 cup sunflower seeds
1 cup unsweetened shredded coconut
2 cups nuts, any of the following alone or in combination: macadamia, pistachios, cashews, brazil nuts, hazelnuts
1/2 cup honey
1/3 cup canola oil
1 1/2 cups dried fruit: banana chips, chopped dried pineapple, dried pears, dried apricots, and/or dried papaya

Preheat oven to 325 degrees F.

In a large bowl combine the oats, sunflower seeds, coconut, and nuts. In a saucepan warm the honey and oil until hot, but not boiling. Then add to the oats mixture and stir until thoroughly combined and well-coated. Spread in thin, even layers in roasting pans. Bake, stirring and respreading frequently, until light golden brown - 15 to 20 minutes. Turn granola into a large bowl and stir in the dried fruit.
