The Recipe: Waldorf Salad

"Waldorf Deluxe" from the Moosewood Cookbook by Mollie Katzen

3 large apples, cut into chunks
3/4 cup cubed Cheddar or Muenster cheese
1/2 cup chopped dates (or raisins or dried cranberries)
1/4 cup toasted nuts (more, if desired)
1 stalk chopped celery

Dressing:
Juice from 1/2 lemon
1/2 cup mayonnaise
3/4 cup orange juice
1/2 tsp. fresh orange rind (optional)
Honey to taste

Whisk together the dressing ingredients. Toss together all the other ingredients. Combine everything and chill. Serve on fresh spinach with thick slices of whole wheat toast , for a simple and luxurious lunch.
