Wasn't it just a few weeks ago that I was proudly proclaiming my dislike of lettuce and all things leafy and green? This salad dressing is good enough to make me want to eat a bowlful of romaine (with a few croutons thrown in for good measure). It's simple, and simple is what I need these days. With a move less than 2 weeks away, our apartment is in a greater state of disarray with every passing day. Unnecessary kitchen gadgets have been packed away, leaving only the essentials. This dressing can definitely be made with just the essentials. Nothing fancy is needed here. And some weeks call for unfanciness.
So if you could use a little simplicity as well, this salad dressing is calling your name. Plus, it's tasty and has the near-magical quality of making the blah-ness of lettuce disappear. And, for this former lettuce-hater, it doesn't get much better than that.
