Caesar-Like Vinaigrette
from the Good Neighbor Cookbook by Sara Quessenberry and Suzanne Schlosberg
2 cloves garlic, minced
1/4 cup freshly squeezed lemon juice (from about 2 lemons)
2 tablespoons grated Parmesan cheese
2 tablespoons Dijon mustard
2 teaspoons Worcestershire sauce
Dash of hot sauce (such as Frank's Red Hot)
1 cup olive oil
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
In a medium bowl, whisk together the garlic, lemon juice, Parmesan, mustard, Worcestershire, and hot sauce. While whisking, slowly add the oil. Season with salt and pepper.
Makes 1 1/3 cups
